Minneolo Marmalade & Muesli Bread: A Confession.

So, I'm guessing there could be worse things do be addicted to, right? While I'm preparing to admit that I am a marmalade junky, I find this breakfast muesli bread. I've suddenly become like a child who only singly eats mac and cheese or pb&j for ...

Roasted Chestnut and Persimmon Stuffing

Stuffing is easily the highlight of most Holiday dinners. It's what turns Sunday dinner in to a Holiday feast and there are about the same amount of people who eat it that there are ways of making it. Here, I've combined a few of my favourites with a little seasonal flare, creating something scrumptious, festive and memorable. What would be lovely on it's own, shuffled up beside stewed cranberries, I originally thought I would stuff red onions. Upon a quick search, I found that the beautiful site, Smitten Kitchen had already done just that but with much different stuffing. Having a surplus of onions and one lonely pumpkin still left from Halloween, I decided to march forward and give you all one more pumpkin dish. Naturally the stuffing can be baked up on it's own, or in any other found cavity, but I really liked the moisture and the sweetness of this little pie pumpkin. It really complemented the dried persimmons and roasted chestnuts headlining the dressing. ...And I still had a little left over for a few onions after all. Happy Thanksgiving everyone. Thank you for all your kind words and encouragement. Enjoy the day, your friends, family and your dinner.

Curried Lemon Quinoa

Oh Yeah! Who doesn't like Quinoa? Haven't heard of it?? I think I have another post around here somewhere...but hmm. Let's see, for starters, it's got a similar texture to brown rice or a firm tapioca or couscous (but better, it's tender with bounce) oh, and it's ...

Savory Zucchini Loaf

It's September, September! I was not only aghast that summer vacation is over but also that I'd made it this far without tinkering into a zucchini bread. There are probably about a million recipes out there, I know, I've tried many, but I think that this can safely ...

Walnut Crumb Banana Muffins

Upon noticing an onslaught of bananas in my frozen hoard and an indecent craving for sweet comfort food, (like I haven't been eating enough of that lately) I hit my freezer stash and thawed a few bananas. Even though they go against a local market movement, they were light, ...

Raspberry Tart

After a meal last week, I thought about some of my recipes on the site. You see, my sister in law, along with being vegan, suffers from Celiac Disease which is a gluten intolerance restricting her diet of all wheat, rye and barley products. No meat, ...

Caramelized Rhubarb & Strawberry Crisp

Rhubarb, I find is one of those thing people either love or not. I like it, in fact I used to pluck it from the garden as a kid, peel the curly red strings and carry around a little bowl of sugar for dipping to gnaw on it raw. There is ...

Chili Thai Spring Rolls

When I thought of making a pasta dish, I wanted something light. I was looking for a quick and cool summer pasta for a crowd, so I hit my pantry and noticed the rice paper sheets I had on hand. Perfect for an appetizer, or a fresh meal, depending on what you choose to fill them with, these really only take a few minutes to assemble making them the ultimate no-cook pasta.

Tabbouleh

I'm not quite sure what it is with grains and rice that, at least whenever I make them, there is always a scoop left over. This scoop, of course, is too big to toss and just big enough not to waste it. Recently I've been revisiting quinoa. I love it! Soft but ...

Juice And A Muffin

Twelve Grain Breakfast Muffins are by far my favourite muffins - breakfast or otherwise. The are so quick and versatile I think I've prepared about twenty or so variations. This latest combination is my current favourite. Wanting more than a traditional burnt raisin and bran muffin, I first began ...
